Vegetarian meal ideas for camping...?
What are your favorite vegetarian meals to take camping? We are also having a potluck dinner with the whole family. I need an easy idea to take to that. And please don't try to be funny and say meat....it's not funny.

- When I go camping I like to chop up various kinds of vegetables such as carrots, summer squash, corn, potatoe, onion, etc.. (pretty much any vegetable you want- be creative) Then you take the vegetables and put them in a pouch formed out of tinfoil and pour some marinating sauce over it (bbq sauce, thick salad dressings, any other marination things-Again, you can choose what kind you prefer- be creative) Then close the tinfoil pouch and throw it over some coals on a fire and let it cook until the veggies are tender. Once they are done, just put the pouches on a plate, cut it open with a knife and enjoy. It makes for easy clean up too because all you have to do is toss out the pouch.
- One of my co-workers makes hobo pie when she's camping. It uses an iron, sort of like a waffle iron you can stick into the fire. You put in two pices of buttered bread and insert whatever fillings you like. You can use fake meat, cheese, etc... If you eat fake meat you can try Morning Star veggie dogs over the fire, as well.
- I always make a big tupperware container of pasta salad. You can put lots of veggies in it and add chickpeas for additional protein. It keeps well, it's filling and you can customize it to your tastes.
- My husband has PKU and cannot eat protein -- so he's been a strick vegetarian all his life (and not by choice!) When we grill at home, he loves the tinfoil packets of veggies. A little pepper and a pat of margarine and let them cook for about 20 minutes. Good to go. OR a good idea for veggies/fruit skewers is cans of whole Irish potatoes (baby ones), cut up onion (you can even dip them in water and a little sugar or br. sugar to carmelize them!), pineapple chunks, peppers, chunks of carrots -- very, very good. Tomatoes are good too, I think, but hubby can't stand them. Personal preference. For a family meal, we always make the oriental coleslaw salad. Hubby doesn't eat nuts or legumes so we don't add sunflower seeds, peas, corn, peanuts, etc to anything. But the Oriental coleslaw (with Raman noodles) is always a hit. Search the internet for a recipe and you'll find lots of good ones out there. If you're going to a fall/winter family gathering, make a hotdish of frozen broccoli, hashbrowns (or your favorite noodles), margarine, favorite cream soup (if you eat it, if not, you can add some non-dairy cheese) & french fried onion (on top) -- Yum!
- Because you added both "easy" and "family", I'd say the dish known as "Ants on a stick" which of course is just peanut butter on celery with raisins on top. Very simple and kids love them.
