I need ideas for meals for our 9 day camping trip.?

We are going camping Yosemite for 9 days. We will have a stove and we already have the typical meals planned like chilli, hot dogs, bacon & eggs, sandwiches and stuff like that but we need more since we will be eating 9 breakfasts, 9 lunches, and 8 dinners. We also have to keep in mind of the quantity of stuff we bring since all of our food have to fit in the bear lockers provided. Please help with some good easy recipes.

  1. you need a bag of potatoes and onions . These can make a lot of side items like AM skillet potaotes, mash, potaote salad, stew's etc... You can make a simple stew with bread
  2. If you have eggs and milk take pancake mix in a ziplock bag. do lots of fishing. Check your local grocery store for dehydrated food packs. Ramen is a good one and great before hikes with a can of tuna or fish you caught. Remember you also want lighter stuff if you are packing in. TVP (textured vegetable protein)also, a big bag of it.
  3. Normally when I go camping I take stuff that doesn't need refrigeration. For example, potted meat and ketchup wrapped in soft tortilla shells. (Ketchup and some other condiments don't require refrigeration even though they say otherwise, just look at the ingredients to be sure). Also, oatmeal and ramen noodles are great. You could go buy a dutch oven at Wal-Mart and make cobblers using bisquick. Dutch ovens are handy at campfires. Not really sure what else you could bake in one though.
  4. we always make a camp fire pizza. you need a med to low heat fire. place all that you want on the pre made shell sometimes i put on alumium foil or a round pizza pan. which helps with not burning the bottom. if you have a cover on you grill even better helps to melt cheese. We also bag up different kinds of meat into zip locks and marinate them in the bag. then throw them in the freezer when your read to go pull them out put them in your cooler and they will thaw as time goes by. keeps them fresher while your camping

  6. Try an internet search for camping recipes. This one sounds good: (Don't forget ingredients for S'Mores!) camping recipe from andrachel. This is a very hearty meal that will leave you full for hours. It is a favorite and must have meal for each trip that we're on. It is even better when you cook it in cast iron over the fire. Prep Time: 45 minutes Ingredients: 1/2 Kielbasa or 1/2 package of maple sausage 1/2 sweet onion, chopped 1/2 red pepper, chopped 1/2 green pepper, chopped 8-12 eggs 4 pre-cooked medium potatoes, sliced cheddar cheese, sliced or shredded 1-2 tablespoons cooking oil Preparation: Put a little oil in a large skillet and cook meat until 3/4 done. The meat will create its own grease, so use just enough to help it not stick at first. Add onions, peppers and potatoes to the skillet. Cook until meat, onions and peppers are cooked completely. The potatoes just need to be heated since they are pre-cooked. Add eggs to the mix. I like a pretty even egg to food ratio, so that it sticks together rather than falls apart. If you start mixing them in, and it looks like you need a few more eggs, just add them in. When the eggs are done cooking, I add the cheese to taste. If you're a real cheese lover, you may want to double up on it. I will sometimes put aluminum foil or a lid over the skillet to make the cheese melt faster. When the cheese is melted, you are done.   8. Krusteaz pancake mix needs only water to make pretty good pancakes. And my family used to make a one pan breakfast dish by cooking cut up bacon in the skillet, removing the bacon to the side, adding cut up potatoes and frying them until crispy, then pushing them to one side and scambling eggs in the empty side. Mix it all together and season with salt and pepper. ( I add a little onion if I have it). Another breakfast is french toast when the bread starts to go stale. As for dinner, Grilled cheese sandwiches; beans and hot dogs with brown bread; soup made with chicken broth, canned tomato, cut up onion, cut up potato(or pasta), and oregano could be refreshing, and builds on the items you are already packing. Have fun!
  9. When we used to camp a lot we would make breakfast trash. Just add all the left overs to some scrambled eggs and cook till eggs are done. You would be surprised, it is actually good and different every time.

  11. For something quick, easy, and easy to pack, check your supermarket for Bear Creek Soups. They are in green packages and you just have to add water and heat. One of the large packages makes a half gallon of soup. Honestly, these are some of the best soups you can buy. They don't need any extra seasonings (usually). The Creamy Potato is to DIE for!
  12. I have 2 fav dishes to fix when camping out - Hobo Joe's & Beer Can Chicken.... Hobo Joes: Tear off # of pieces of foil needed to make a good size packet. In center of each piece of foil place one hamburger patty 0 seasoned, boneless chicken breast, or pork loin chop. Add a mixture of sliced potatoes, cubed onions, baby carrots & mushrooms. Add 1tbsp cream of mushroom soup & 1 good pat of butter. Seal packets & place over coals or on edge of fire & grill til meat is done.....Tear open & enjoy!! For Beer Can Chicken, simply take a chicken & clean innards out. Sprinkle outside with your favorite seasoning & rub with garlic. Pierce top of beer can in 2 - 3 places & then insert can into chicken's butt....Place over medium/hot coals & grill til meat is done.......Serve with toast, baked beans, etc......
  13. pan bread flour and a little water dipped into pesto sauce you can also eat it with jam, butter or pizza sauce, oranges and cake mix in the fire. whip up the cake mix pour into full orange peel wrap in tin foil, banana boats with pb, choco chips, marshmellows, oats and apple sauce for breakfast pitas filled with pizza sauce mushrooms, cheese green peppers etc fold in half wrap in tin foil throw on coals of fire for 5 minutes and you have a panzarotti
  14. Yikes! I hope its not too soon, its cold up there right now. I went camping last year and here's some things I found that worked : -Bisquick pancake mix (just add water, no need for eggs) -There are some muffin/cornbread/cake mixes out there that just take water also - I had a chocolate chip pancake recipe and corn bread (although these are more difficult to make on the fire - you can make cornbread <with canned chili> and muffins like pancake shape and easier to cook and serve) -The first couple days for lunch or dinner you can bring fresh/frozen items. I brought frozen steaks wrapped in a ziploc bag, then in foil (they stay frozen for quite awhile) -I also brought potatoes for baked potatoes, pre-washed and wrapped in foil...at Wendy's they have little travel size packs of sour cream that I froze also and also froze snipped chives for baked potatoes. -For more breakfasts, you can have diced potatoes with anything - frozen cheese, frozen veggies mix of diced tomatoes, onions and peppers and roll up in a tortilla.
  15. So "Sarah Grissom" had a good answer. Dutch ovens are great to have. You can do a pork roast with some onion, potatoes, and carrots. Make some gravy with some drippings, and I don't think you need to keep flour in the bear box, just bring a quart ziplock baggie of it to minimize the space it takes up. You can also do fried chicken but the oil would take up far to much space. You could bake some chicken with some lemon and garlic butter. You can also do milk can stew, which is everything that is left over, corn on the cob, sausage, veggies, prok roast, some water etc... and put on for a slow simmer. You could also make up a casserole or 2 in take and toss alumnium pans and then bake them up. The trash eggs or whatever the other answer'er called them are very good I agree. Use whatevre you have left over after say 2 days.
  16. I'm sorry to say Yosemite is closed to camping for the winter you need to wait until late april to be able to camp in the valley. As for camping recipes I have 2 cook books available written for camp cooking recipes. It depends on how much cooking you want to do. Do you want something quick or tasty? Here's a few recipes to try and they are both quick and tasty. One Messed up Omelet for 12 David Herzog 2 c. ham, diced or browned hamburger sausage or bacon 2 c. onion, diced 2 c. green bell pepper, diced 2 c. mushrooms, sliced 2 dz. Large eggs scrambled with ¼ cup water Season salt and pepper to taste 8 oz. shredded cheddar, jack, or any cheese you like 3 Tbs. butter In a 10” or larger Dutch oven, combine meat and vegeta- bles with butter and sauté until heated through but slightly firm. Add eggs, salt and pepper. Stir together, cover and cook5 to 10 minutes over medium heat. Remove cover and stir, top with cheese and cook 5 minutes more. Serve Mexican Spoon Bread 1 15 oz. can cream corn 1 ½ cups milk 1/3 cup oil 4 eggs 2 cups corn meal 4 tsp. baking powder 1 tsp. salt 1 4 oz. can diced Ortega chilies 12 oz. Mexican cheese like Queso Fresco or Queso Blanco, crumbled In a bowl, combine eggs, milk, and oil together. Stir until well combined. Add cream corn, stir to combine. Add remaining ingredients and stir until just combined. Pour mixture into a 12” Dutch oven and bake at 350° for about 1 hour or until inserted toothpick comes out clean. Serve with salsa, preferably fresh made. Serves 6 to 8 Camp Breakfast Drew Woods 8 strips bacon 1 large yellow onion, diced 3 large leftover baked potatoes, diced 6 eggs Salt and pepper to taste Cut bacon into 1” pieces and fry in a 10” Dutch oven over high heat and cook until crisp. Add onion and cook until clear, but not browned. Add potatoes, cooked until warmed through or browned. It’s up to you! Break the eggs over the top and cover. Cook 5 minutes, or scramble the eggs and potatoes together. Sprinkle cheese over the top of the scrambled eggs if you like. Salt and pepper to taste. We say it serves 2 but there is enough for 4. Dave’s Dutch Tamale Pie Dave Herzog 1 lb. ground turkey (try lean ground round) 1 ½ Tbs. chili powder ½ tsp. cumin 1 tsp. fajita seasoning 2 Tbs. garlic, minced 1 28oz. can diced tomatoes 1 15 oz. can whole kernel corn (try hominy, YUM!) 1 8 oz. can diced green chilies 1 ½ c. shredded Colby cheddar cheese ½ c. chicken broth 1 12 oz. box corn muffin mix (12 oz. Aunt Jemima corn bread mix from a 5 lb. bag) ½ c. milk 2 Tbs. melted butter or vegetable oil 1 large egg In a 12” deep Dutch oven, brown turkey with chili powder, cumin, and minced garlic. Add tomatoes, corn and chilies. Stir well. Add broth, stir. Layer cheese over the top of meat mixture. Mix corn bread mix, milk, butter, and egg. Spoon over turkey mix and cheese evenly. Cover and bake at about 375o for 35 to 45 minutes until bread is firm and baked through. Serves 6 Braised Cabbage and Turkey Sausage David Herzog 2 c. 1” diced celery 2 c. 1” diced red onion 8 to 10 c. chunked cabbage, cored 8 links turkey sausage Salt and pepper to taste In a 12” Dutch oven, cook the turkey sausage over medium heat with 1 Tbs. olive oil. Remove sausage and set aside. Add 1 Tbs. olive oil and sauté celery and onion for 8 to 10 minutes until slightly browned. Add cabbage chunks and ½ c. water or chicken broth. Cook cabbage 8 to 10 minutes, until slightly wilted. While the cabbage is cooking, slice the sausage into bite sized pieces, then add to cabbage, stir. Salt and pepper to taste. Cook 8 to 10 minutes more to heat sausage. Serve with garlic mashed potatoes. Serves 8 to 10
