- Back Country Cornbread thanks to Kevin Nash/Ks Paddler Recipe Ingredients: 1 box Cornbread mix 2 tsp powdered eggs 1 tsp powdered milk 1/4 cup of water Cooking instructions: Add together the cornbread mix, powdered eggs and milk into a small or medium size roasting bag. Pour in the water and mix or knead the mixture. Close the bag and place it into a pan with 1 1/2" of water. Cover pan and bring to a boil for about 10 minutes. Remove from heat and let stand for 5 minutes. Open bag (careful of the stream) and remove cornbread. Variations/Hints: This would be a bag of cornbread (how do we explain the looks). Variations are to add dried onions, or peppers, or jalapenos to mix. Also, here's a KOA cornbread recipe: http://www.koa.com/recipes/files/0696.htm
- Double Frying Pan Biscuits Use 2 frying pans, both of them heated and greased. Put the dough in the botto one and set at once in a bed of embers or on a med. hot stove top. Cover with the other pan and then cover with hot embers. and do not uncover until you think the biscuits are done. Use a dutch oven and evenly space 6 briquettes under it. Place your dough in the dutch oven and turn the lid upside down and place another 6 briquettes evenly spaced on that and cook for the desired time. A dutch oven will bake almost anything if you use this method. We even baked cakes and pies this way. Frying pan Biscuits Fry dough in grease over med heat for half the allotted time then flip and fry the other side. Twisters Twisters are buiscuit dough wrapped around a stick much like a hotdog stick and cooked over the coals like you would a marshmallow. When brown take off the stick and fill with peanutbutter and jelly or your favorite flavored cream. Make cinnamon french toast and add syrup or top with fruit for a nice dessert.
