- Not sure what kind of recipe you want, but potato salad keeps well, even 3 or 4 days in a cooler as long as it's kept very cold. Be sure and put the potato salad in a leak proof container. *6 boiled potatoes, cut into bite-sized pieces... *4-5 hard-boiled eggs, diced or cut up... *diced sweet vadalia onion, about 1/2 cup or more to taste... *sweet relish, about 1/4 cup, I use my own homemade zuchinni relish, it's so delicious... *then stir up in a seperate bowl, 3/4 to 1 cup Miracle Whip *1/8 to 1/4 cup mustard, to taste... *1 tsp. garlic salt... *2 TBSP sugar or Splenda (my hubby is diabetic).. *1/2 tsp. celery seed... *1/2 tsp. dill weed... *1/2 tsp. parsley flakes... *1/4 cup milk... Stir well to mix, and pour over veggies. Use only as much as you need for the amount of moisture you want in the potato salad. Try using only 3/4 of this mixture, stir salad well, and add the rest if you want it moister. THIS IS DELICIOUS! Hope you enjoy it and happy camping. I really miss camping :(...God bless you too.
- This is as easy as it gets, at home before you go to camp boil up some chicken, ptu it in a rubbermaid container with your favorite italian dressing and wash off some mushrooms and throw them in there too. Cover with the rubbermaid lid and put in fridge. Make a day before you go. When you get to camp, fire up the grill and put the chicken in a foil pan and cook (HEAT UP ) the chicken or spray the grill with non-stick cooking spray, turn on and then put chicken on until it is warmed up and lightly brown. You will have to use a small foil pan for the mushrooms if you cook the chickn on the grill. Enjoy!!!
- Cut up melons and clean some strawberries and some grapes. Put them in a rubbermaid container and bring some vanilla yogurt. That is dessert just mix them together. For the main course get a large tin foil container with a lid and mix up cooked bowties, your favorite sauce and some seaoned grouend meat and on top put some muenster and parmasen cheese. Whe at camp put on the grill, stir occasionally and walla theroughthe pan away when done and it will serve alot and don't for get the bread, stick of butter, salade dressing and a rubbermaid container with chopped, clean salade. I did that one year and my friends liked it, hope you do.
- Try some soup, chili or stew. You can make it a few days ahead then put in leak proof container and just put in saucepan and heat up at camp. YOU can even freeze it and it will help keep things in cooler cold. It will thaw slightly and you can take it out a few hours before mealtime and it will be ready to heat up and eat
- The best camping food ever is Foil Dinner! Very easy...all you need: raw hamburger meat potatoes carrots onions seasoning (salt/pepper/season all/whatever) cream of mushroom (optional) foil When you have your campfire at night, make sure you have really nice hot coals. Use about 1/2 pound of meat, cut up the potatoes, carrots, and onions (or whatever veggies you want to use), mix them all together on a sheet of foil, add seasoning to taste, and pour the cream of mushroom on top. Then securely wrap (double wrap) all the ingredients in the foil, throw it into the fire into the hot coals, and just wait 30 minutes. Make sure you turn it over after 15 min. Take the foil out of the fire and enjoy! It is soo good!
- Spaghetti. Make ahead if you want, and seal in ziplocks. You can even make the noodles, mix with the sauce and then seal in ziplocks. Or make at the site!
- We make tacos alots. Also soups that will make a couple of meals.
- Bring a crock pot to camp. Make up chili and then freeze it , that will also serve as 'ice ' in your cooler. Get to camp and put it in the crock pot and for a treat you can make some cornbread at home and bring that to camp as well, just make sure you don't smush it on the way there. Have Fun!!!
